Its piquant yet sweet, creamy flavour and orange-coloured rind are the result of repeated rinsing with Marc de Bourgogne. The cheese has an aromatic and sticky exterior and a soft white paste. Soumaintrain ripens over a period of 6-8 weeks, when it becomes sweet, salty and milky.
