Sambal is popular sauce in Indonesia, Malaysia, Singapore, the southern Philippines, South Africa and Sri Lanka, as well as in the Netherlands. Typically made from a variety of chilli peppers, it is sometimes a substitute for fresh chillies and can be extremely spicy for the uninitiated.
