Golden syrup or molasses syrup is a high-sugar liquid produced in the sugar manufacturing process and has long been used in confectionery and pastry technologies. Unlike sugar, it does not clump or crystallise, and is therefore recommended for delicate desserts or cake frostings. It has a soft texture and colour similar to honey and is often used as a substitute for honey.
