The biggest and today the rarest type of sturgeon. The yearly catch hardly exceeds 100 pieces. Even though the roe content may reach 25% of the fish’s body, the female will be mature only by the age of 20-30. Beluga gives the most delicious and the most expensive caviar in the world. Caviar, of course is not made, it is a wonderful gift of nature. Sturgeons are catched and roe is collected by cutting their belly – some say alive, because roe may become bitter afterwards. Roe is thoroughly washed and dried. Than salt is added, which is important for preservation and the creation of the caviar’s texture.
