Beluga is the biggest and today the rarest type of sturgeon. The yearly catch hardly exceeds 100. Even though the roe content may reach 25% of the fish’s body, the female will be mature only by the age of 20-30. Beluga gives the most delicious and the most expensive caviar in the world.
