Sevruga caviar comes from a species of sturgeon known as Acipenser stellatus, also called the starry sturgeon.The eggs are a fine-grained pearlescent grey to black, and smaller in size than in other Caviars. The buttery, salty flavour is more pronounced than other varieties.
