Christian Drouhin for making Calvados uses apples middle and late harvest because early varieties ripen at sufficiently low average daily temperatures, which does not benefit the quality of cider. After the first distillation gave a colorless "intermediate" product with a distinctive flavor and 30% strength. Followed by a second distillation process is obtained which already 70% colorless alcohol fruity aroma. To give a delicious flavor and aroma, drink from 2 to 25 years or more (depending on the type of Calvados) spends in oak, necessarily French barrels (mostly old), which achieves the necessary maturity Calvados, full taste, beautiful color and excellent flavor. Like cognac, calvados at the end of the aging process blended.

About the company

Christian Drouin senior bought his first land in the area in 1960, near the village of Gonneville-sur-Honfleur. Together with the now central Coeur de Lion estate and other smaller orchards, these farms supply the apples to the now world-famous Calvados drinks of the Drouin family. The Coeur de Lion orchards were planted and grafted between 1993 and 1995, and became productive between 2005 and 2010. The typical 17th-century timber-framed buildings of the estate are used to make the drink, and we can follow the entire process if we visit this famous corner of Normandy. During the oak barrel ageing process, the most fragrant ingredients that give the fresh spirit its burnt flavour disappear. The Calvados extracts a wide variety of different substances from the barrel wood. The most important are the tannins, which are responsible for the colour and body of the drink. Contact with air also adds a variety of new flavours to the drink. The Christian Drouin Calvados drinks are blended under the age of 20 years, but after that each barrel is bottled separately. We recommend this drink for festive occasions, or even as a post-meal conversation or contemplative drink. This bottle has been in cask for no less than 30 years, so it is a very old Calvados. A first-class gift for anniversaries or special holidays. Available in an elegant wooden box.
