Winemaking takes place in a traditional way. The 220-260 liter Szerednye barrels are made of Zemplén oak, and the wine ferments and matures in them for 6-8 months. After that, after a precisely adjusted bentonite clarification, it is bottled before harvest. The exact winemaking operations are determined by the particular wine. (extent of battonage, question of malic acid, sulphurization, dissection, use of barrels) Since the grapes are grown under organic conditions, there is practically no need to intervene in the development of the wine (no specific yeast, enzymes, combined clarifications, etc.).
