This cheese was originally flavoured with fresh truffles, but nowadays it is flavoured with a creamy truffle cream, which does not detract too much from its enjoyment. It should be eaten fresh rather than overripe.

The cheese takes its name from the French province of Brie. Underneath a pale white mouldy rind with a greyish tinge lies a very soft and piquant flavour with a slight ammoniac character.
