Like prosciutto, Speck is made from the hind leg of the pig, and is a delightful alternative to Pancetta. Wonderfully delicate and tender with a rich savoury flavour, Speck pairs beautifully with goat cheese. It can be served with some fine mustard, chives or a squeeze of lemon. A simple and tasty appetizer. This kind of antipasti arrives in an approx. 1 kg case.
