Rice vinegar is made from fermented rice or, in some countries, rice wine. The main countries producing and using rice vinegar are China, Japan, Korea, and Vietnam. Rice vinegar, which ranges in colour from completely translucent to light yellow, has a lower acetic acid content than non-Asian vinegars and is therefore much milder. It can be used in sweet and spicy dishes, as a salad dressing or to marinate vegetables.
