Hacienda Sonora is located at the foot of the Poás Volcano. It operates with 100 percent renewable energy, which is generated by hydropower plants. It powers the wet and dry mills and provides electricity for living and working on the farm. 45 of Hacienda Sonora's 100 hectares grow coffee under the shade of exotic trees and other native vegetation.
This biodiversity makes the soil healthy and rich in nutrients. Another 20 hectares have been producing sugar cane for more than 150 years now, and the remaining 35 hectares are a primeval forest reserve.
At Hacienda Sonora, the coffee beans are selected by hand, the ripe cherries are washed with clean water and dried. It is then stored for two months, then peeled in the dry mill, and this dried shell is sent to us by Goosebums as cascara.
