IPAs are characterized by the character of floral, fruity, citrus, pine-like or resinous hops, while the IPA beer style is about the taste, aroma and bitterness of hops. India’s Pale Ale (IPA) is the most defining style of new-wave small-scale brewing, dating back to the English colonization of India. Merchants wanted to optimize the long and expensive cruise by making stronger and more hop-like beers, making them bitter, fuller, tastier, and more durable, and then offering them locally, already in a watered form. This was often not expected by the stationed soldiers and the much kinder potions were tapped. This story served as the basis for the start of the American small-scale beer revolution in the roughly 1980s, when breweries began to brew beers in a similar style, with an extremely exciting hop-based, thus fragrant and bitter beer.
