Shortly after World War II, the Trappist monastery of St. Sixtus in Westvleteren was looking for someone to sell their beer because they no longer wanted to make it themselves. A permit was given to the local cheese factory and the St. Bernard Brewery was established. Mathieu Szafranski, a Polish brewer from Wetvleteren, was associated with the brewery and brought with him recipes, background knowledge and the St. Sixtus yeast strain.
