Perliss The Ravens Cabernet Sauvignon 2013 is a deep, complex, and elegant red wine that showcases the best of Napa Valley’s terroir.
A Brooklyn native, Dr. Herbert moved to San Francisco in 1971 as a physician with the US Military. In 1989, he purchased thirteen acres of unimproved land in Napa Valley’s northernmost AVA, Calistoga, to further enjoy the diverse natural beauty of the Golden State. In 2008, almost twenty years after finding the property, the timing felt right to plant some vines.
On the nose, it reveals blackcurrant, ripe blackberry, and smoky spices, accented by hints of chocolate and cedar. The palate is rich and full-bodied, with velvety tannins and a layered structure. Thanks to extended aging, flavors of dried plum, spice, and subtle earthiness emerge, culminating in a long and refined finish. An excellent pairing with steak, lamb, or aged cheeses.
