A natural sweetener which is made from the stum of Trebbiano and Lambrusco grapes by cooking.
Acetaia Leonardi was founded in 1871, and it is regarded as one of the finest balsamic producers in Modena, building upon the fine reputation of the wines emanating from its vineyards. Its 'tradizionale' balsamic is amongst the best, and The Leonardi's are trying to address that dilution in quality.

Saba known as a 'Dressing' in Italy, is the sweet reduction of grape stum. It's the same stum used for balsamic vinegar, except cooked down even more, to about one-third its original volume. Saba is aged for two years in chestnut and oak barrels.
