Christian Drouin sold the first Pomme Prisonnière in 1981, the result of a special process. The idea came from Didier Alleaume, whom he met by chance; Alleaume's family has been making such a special gift for four generations, sealing fruit in the bottle. Drouin immediately thought why not try this with apples and calvados. This is how their collaboration was born, which soon became a hit product under the name Pomme Prisonnière. Today, the name Pomme Prisonnière is often used for the type of drink itself. The process of making them begins in spring, when the pink and white flowers cover the trees in April. In May, the beginnings of fruit develop from the withered petals, many of which fall off, only about 5% of the embryos develop into real apples. The timing of placing the bottle is crucial: if you wait too long, the neck of the bottle will no longer fit over the growing fruit, while placing it too early will endanger the integrity of the fruit. Choosing the right moment is essential so that the apple can grow freely in the jar during the summer. In September, the bottle is carefully separated from the wood, cleaned and then filled with Christian Drouin's Pays d'Auge calvados. During the months-long maceration, the flavors of the apple and the calvados come together, which is how the special "bed" calvados, Pomme Prisonnière, is formed. Despite the high error rate, a few bottles of this precious drink are made every year. To preserve quality, always ensure that the apple remains completely covered in the calvados.
