In its aroma, the aroma of baked apples, almonds and delicately appearing spices is harmoniously combined. Its taste is initially dominated by fruity notes, which are gradually taken over by vanilla and woody tones. And its finish lasts extremely long, it's really impressive!

About the company

Christian Drouin Sr. became the owner of Fiefs SainteAnna on the lanches of Gonnevilla, near Honfleur. The farm was planted with apple trees, and Christian was soon seized with the desire to produce his own calvados. He was strict and proactive at the same time: Pierre Pivet, well-known in the northern part of the Pays d'Auge, spent his first twenty years distilling his cider with the help of a licensed master distiller. The resulting calvados were set aside for aging in former sherry, port or calvados barrels stored in the farm's old outbuilding. He was also able to get his hands on several barrels of very old Calvados after the estates of some of the area's top producers were sold. Senior Christian Drouin already won his first medal in the regional competitions in Paris.

Product description

Christian Drouin sold the first Pomme Prisonnière in 1981, the result of a special process. The idea came from Didier Alleaume, whom he met by chance; Alleaume's family has been making such a special gift for four generations, sealing fruit in the bottle. Drouin immediately thought why not try this with apples and calvados. This is how their collaboration was born, which soon became a hit product under the name Pomme Prisonnière. Today, the name Pomme Prisonnière is often used for the type of drink itself. The process of making them begins in spring, when the pink and white flowers cover the trees in April. In May, the beginnings of fruit develop from the withered petals, many of which fall off, only about 5% of the embryos develop into real apples. The timing of placing the bottle is crucial: if you wait too long, the neck of the bottle will no longer fit over the growing fruit, while placing it too early will endanger the integrity of the fruit. Choosing the right moment is essential so that the apple can grow freely in the jar during the summer. In September, the bottle is carefully separated from the wood, cleaned and then filled with Christian Drouin's Pays d'Auge calvados. During the months-long maceration, the flavors of the apple and the calvados come together, which is how the special "bed" calvados, Pomme Prisonnière, is formed. Despite the high error rate, a few bottles of this precious drink are made every year. To preserve quality, always ensure that the apple remains completely covered in the calvados.
