Luigi Guffanti began to season Gorgonzola cheese in 1876. His brilliant intuition was to purchase an abandoned silver mine in Valganna, in the Varese province. In the mine, with its temperature and humidity constant year-round, the cheese matured so well that Luigi quickly cornered the market.

Traditionally the mozzarella is made from buffallo milk. It gives very little amount of milk, so this kind of cheese is very unique. It is an unripened, preservative-free, unflavoured cheese, so it is very seasonable. Ideal on pizzas, in pasta or in delicious salads.
