Winemaking begins with gentle pressing, followed by temperature-controlled fermentation. Aging lasts 12 months in oak barrels.

The history of the estate dates back to the 15th century, when the Masseria was operated under the management of monks. Later it was owned by several Italian families, and from 2003 it became part of the KIKAU group. Both viticulture and winemaking practices are done organically at the estate, the defining character of which is the long vineyard surrounded by olive trees, thereby ensuring biodiversity in the valley.
