A mild, white soybean paste for making soups, stews, marinades, dressings etc. Always add miso to soups and stews at the end of cooking, since boiling it destroys beneficial bacteria and causes it to curdle (Okasan means Mother in Japanese, so this is mother’s miso!). Miso is a traditional Japanese seasoning produced by fermenting rice, barley and/or soybeans, with salt.
